LEMON FROSTED COOKIE DONUTS

  • ¼ cup zero calorie sweetener
  • 1 tbsp lemon zest
  • 2 eggs
  • ¼ cup melted butter, barely cooled
  • 1 tbsp almond milk
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • 1 cup almond flour
  • 2 tbsp tapioca flour
  • ½ scoop Quest Vanilla Milkshake Protein Powder
  • 1 tbsp baking powder

Frosting:

Technique

  1. Preheat the oven to 350 F and put together a regular silicone donut pan with non-stick spray.
  2. In a mixing bowl, add the sweetener and zest. Use your fingers to rub the zest into the sweetener granules.
  3. Add within the eggs, melted butter, milk and extract and whisk to mix.
  4. In one other bowl, stir collectively the almond flour, coconut flour, protein and protein powder.
  5. Add the dry components to the moist and whisk till no dry spots stay. Distribute the batter between 7 cavities and bake the donuts for 20-24 minutes. Let cool.
  6. For the glaze, stir collectively the milk and oil after which whisk within the protein powder till you get a glaze consistency.
  7. Drizzle glaze over every donut and prime with Lemon Frosted Cookie items and serve.
